Tips and tricks:
1) Avoid shocking your deep freezer.
When you load your deep freezer for the first time, freeze 20-30 2-QT buckets at a time to reduce the chances of overloading it. When your freezer becomes overloaded, it will be inefficient at freezing your product and will take longer to freeze. When starting up, freezing 2-3 flavor sets per deep freezer at a time makes sure you do not overload them.
2) Watch out for separation.
Some flavors tend to separate more often than others. Be sure you check your flavors midway before completely freezing to make sure they are uniform. It not, shake them inside the container to mix them or open the lid and blend with a whisk or immersion blender. If product is frozen but has separated, force blend it with the immersion blender and freeze again.
3) Once your flavors have frozen, pop them out of the 2-QT buckets and place them in the gallon zip locks, unsealed, and place them back in the deep freezer to freeze further.
